My “Detox” Chicken Soup

It’s time to break out your dutch oven and whip up the soup of the season! I concocted this soup years ago now and it is still a favorite amongst the entire LE community! I wanted to create something that was cozy, tasty, and full of amazing ingredients. Below is the recipe, tips, and fun facts!


Ingredients:

3-4 boxes of organic unsalted chicken broth (depending on preference and bone broth)

1 box of bone broth or scoop of Vital Proteins Bone Broth Collagen

LE’s favorite broths: Kettle & Fire Brand

Half an onion

Two full-size carrots

Two full-size celery sticks

3 cloves of garlic

Handful of mushrooms

Three large stems of dinosaur kale

One rotisserie chicken

Fresh ginger or ground ginger

Apple cider vinegar

2 lemons

Turmeric

Pepper

Salt

Red pepper flakes


For vegans: Replace chicken broth with mushroom broth and remove bone broth. Add vegan collagen powder and of course, remove chicken. Feel free to add more veggies as well!


Instructions:

Chop up your onion, celery, garlic, mushrooms, and carrots

In a dutch oven, turn heat to high and add olive oil

Add all chopped veggies and season with salt, ginger, pepper, and turmeric.

If you’re using fresh ginger, chop to preference, I personally do larger pieces and take them out later.

Cook down veggies but overcook since they will be simmering in the broth for quite some time

Add all broth and a generous splash of ACV, bring soup to a boil

As the broth and veggies boil, cut & pull apart the entire rotisserie chicken adding it in as you go

The soup will break up the chicken naturally as well so no need to make it pretty

Once the soup comes to a roiling boil, turn to a simmer

Pull apart kale to your size preference and add it to the soup

Season soup with salt and pepper then cover letting it simmer for at least 30 minutes

Squeeze in lemon, stir, and taste (add red pepper flakes if you like) - season accordingly

This soup is SO yummy and allows you to really play around with the seasoning! I love the spicy kick from the red pepper flakes, lemon, and pepper so I always add more of those ingredients! It has so many nutrients and benefits for your body as well!
